Chocolate Crackles
Ingredients;
Coconut oil (to mix ingredients) 10 oz, or about 1-1/4 cups
Powdered, or confectioner's, sugar
1 cup Cocoa
1/2 to 2/3 cup Rice Bubbles (crispy cereal)
4 cups Coconut, (dried,shredded & unsweetened)
Method
1. Melt the coconut oil in a saucepan over a low flame.
2. Sift powdered sugar and cocoa powder together. Stir in rice crispies and dried coconut.
3. Stir dry ingredients into coconut oil until well mixed.
4. Scoop small portions into paper cake cups. Chill in the refrigerator till firm and serve.
Bacon Stir Fry
Ingredients
2-3 strips bacon
1 bell pepper (use red & green for more color)
2 small onions
1 carrot
8-10 snow peas
4 mushrooms
2 Tbsp. satay seasoning sauce or sauce you prefer to use (e.g. Worcestershire Sauce-pictured above)
Method
Prepare vegetables by cutting into bite-size pieces. Cut bacon into thin strips and fry on medium heat until it starts to become crispy. Add vegetables and fry until they become tender, stirring constantly. Mix satay sauce with equal parts water, pour over vegetables & bacon and fry 2 minutes. Be sure not to overcook. Serve hot on beds of freshly prepared rice.Footnote; In the UK, Worcestershire is pronounced 'woost-ur-shire' and Worcestershire Sauce is referred to as 'Worcester Sauce', pronounced 'woos-tah'. In many other parts of the world, however, it is referred to as 'War-sest-uh-shire' Sauce.
ANZAC BISCUITS
Anzac biscuits (cookies) are crunchy and economical. They are an Australian favorite. Anzac biscuits were created during World War I when there were egg shortages. Australians sent them in food parcels to the troops who became famous as Anzacs. (Australia and New Zealand Army Corps)
1 cup Quaker Oats
3/4 cup unsweetened desiccated coconut
2 tbsp boiling water
4 oz butter
1 cup all purpose flour
1 cup sugar
1/2 tsp baking soda
1 tbsp golden syrup
Preheat oven to 300° F (about 160 C). Lightly grease baking trays. Combine oats, coconut, flour and sugar. Combine butter and syrup in saucepan and stir over low heat until butter melts. Mix soda with boiling water; add to melted butter mixture. Stir into dry ingredients. Drop teaspoonfuls onto baking trays and press with fork. Bake until golden brown, about 20 minutes.
Cool on trays for a few minutes, then carefully remove to wire racks. Store in airtight containers. Makes around 48 and you will be lucky to keep them stored for long!
Aussie Potato Pancakes
Ingredients
2 Eggs
1 tbsp Tomato Ketchup
1 Small Onion, finely grated
2 Slices Ham, shredded
2 medium Potatoes, peeled and grated
Salt and pepper
50g/2oz Butter
1 tbsp Oil
Method;
1. In a large mixing bowl, beat the eggs, ketchup, salt and pepper.
2. Strain the grated potato to remove excess moisture.
3. Mix the potato, onion and ham (if using) into the egg mixture.
5. Heat the butter and oil in a large frying pan until hot then carefully drop dessertspoonfuls of mixture into the pan immediately pressing down on them to about the size of a slice of bread but not as thin.
6. Cook for about 2 minutes until the pancake set on one side then turn and continue to cook for a further 3 minutes. Turn again and cook for a further 2 minutes. Or if you are cook you will know how long to do each side. *grins* Serve hot.

Caramel Slice
Ingredients
Base: ½ cup brown sugar
1 cup S.R. Flour
½ lb melted margarine or butter
1-cup coconut
vanilla essence
Method
Put dry ingredients in basin, pour over melted marg or butter and mix well. Press into slice tin and bake in moderate oven 10 minutes.Carmel Centre
1 tin condensed milk,
2 tablespoons of Golden Syrup
1 tablespoon of marg. Or butterMethod
Mix all ingredients into a saucepan (or better still do it on defrost in microwave) over low heat till butter melts. Pour this over base and return to oven for further ten minutes.Topping (when cold)
3ozs of copha
½ cup drinking chocolate
Melt copha over chocolate and mix well. Then pour over slice when cold then leave to set.
Cut into very small slices when cold. (very rich)
Potato Soup
(hearty & delicious)
Ingredients
4 slices bacon, 4 large chopped onions, 4 large cubed potatoes, 4 cups hot water, 4 chicken stock cubes, 1oz butter, 2 tablespoons flour, 1 tablespoon parsley, 1 cup sour cream
Method: Saute bacon, remove from pan and cut into small pieces, saute chopped onions, to onions and bacon add flour, crumble in stock cubes and stirring to thicken add hot water, add slices potatoes, salt and pepper to taste and simmer carefully until potatoes are tender but not mushy, before serving stir in sour cream.
Lamingtons
Ingredients;
6 x eggs
3/4 cup castor sugar
1 cup self raising flour
1/3 cup cornflour
1/3 cup hot water
3 tsp butter, melted
3 cup desiccated coconut
4 cup icing sugar
1/3 cup cocoa
3 tsp butter
1/2 cup milkMethod ;Crack the eggs into a mixing bowl then beat the eggs until thick and creamy.
Gradually add the sugar and beat well until the sugar has dissolved.
In a large bowl, mix the self raising flour with the cornflour.
Add the butter to the hot water.
Add the flour mix to the beaten eggs and stir well then add the hot water mixture. Combine very well.
Pour the batter into a 23cm. square cake tin that has been well greased.
Bake the cake at 180 c. for 35 minutes then turn out and cool on a wire rack.
Icing;
To make the icing, mix the icing sugar and cocoa together then add the melted butter and hot milk. Stir well until the mixture is smooth.
Cut the cake into squares then dip each square into the chocolate icing then roll the cake in the coconut. Drain on a wire cake rack.
If you wish, cut the squares in half and spread with jam or cream before dipping.
Curry Almond Spread
(a wonderful dip recipe)
16 oz. cream cheese
2 tsp. curry
1 cup chutney
1/2 tsp. mustard
3/4 cups sliced almonds
1 or 2 green onions
Method;
Combine the cream cheese, 1/2 cup chutney, curry and mustard.
Place in a bowl lined with plastic and refridgerate. When ready to serve, turn onto a platter, top with the remaining chutney, slivered almonds, and sliced green onions. Serve with crackers.
