Split Pea and Bacon Soup
Ingredients;
1 stalk Celery, sliced finely
1 medium Onion, chopped finely
2 medium Potatoes, diced
1 Tbsp Lemon Juice
3 Bay Leaves
1 cup Frozen Peas
1 tsp Thyme (Dried)
375g Split Peas (green)
Bacon Bones
Directions;
Place bacon bones, water, peas, onion, celery, bay leaves and thyme in a large saucepan. Bring to the boil, cover and simmer for 45 minutes or until peas are tender. Remove bay leaves and bacon bones. Add potatoes and simmer until tender. Add peas and continue cooking until peas are hot. Serve sprinkled with lemon juice.

1lb-minced steak
1 small onion
½ pound beans (chopped coarsely)
½ cabbage shredded
½ cup of rice
4 cups of boiling water
2 onions
1 dsstp. Curry (or much less if you don’t like it that hot)
1 pck. Chicken noodle soup
Method
Fry mince and onions in butter until brown. Put in saucepan (or electric frypan or skillet) and add other ingredients. Cook very quickly for 15 minutes.
Soy and Chilli Fish Parcels
4 white fish fillets
cooking spray
1 1/2 cups bean sprouts
3 cloves garlic, crushed
4 green onions, sliced
1/4 teaspoon sesame oil
2 tablespoons ketjap manis
1large red chili, seeded and chopped
2 teaspoons sweet sherry
Divide fish into 4 large pieces of foil which has been lightly coated with cooking spray.
Divide sprouts among fish, top with combined remaining ingredients.
Seal foil to enclose fish, transfer to baking dish.
Bake in BBQ with lid down for about 30 minutes or until fish is cooked through.
Can be cooked in oven at 180C (350F).
Pineapple & Cheese Cream Salad
Ingredients
1 small tin pineapple pieces, chopped parsley,
cream cheese, 2 lettuces, salad dressing, seasoning.
Method
Wash and soak the lettuce. Shred half of it.
Chop all the pineapple except one slice.
Cut the cream cheese in small cubes. Mix together,
add seasoning and bind with a little dressing.
Make a bed of lettuce and pile the mixture in the centre.
Put a layer of small lettuce leaves on top.
Lay the pineapple slice in the centre and fill up the
hole in the middle with tiny pieces of cheese rolled in
chopped parsley.
Pikelets(easy to make)
Ingredients
1 cup flour
1 tsp. cream of tartar
1/2 teaspoon bicarbonate of soda
1 egg
few drops lemon essence
2 Tbsp sugar
milk
Method;
Sift the flour, tartar and soda together, then add sugar. Make a well in the center of the mixture and drop in egg and some milk. Mix from center, gathering flour from the sides of the well. Add milk as needed to make a thick batter. Add a few drops of lemon essence to taste. Drop batter into hot frying pan to make 3" circles.
Top with butter or jam and serve with Devonshire tea.
Dim Sims
Ingredients;
125g (4oz) minced pork
4 shallots, finely chopped
1 cup shredded cabbage
10 shelled prawns, finely chopped
1 tbsp cornflour
1 egg
2 tbsp soy sauce
few drops sesame oil
1/4 tsp salt (optional)
wanton wrappers
oil for frying
Directions;
Combine all chopped ingredients, with cornflour, egg, soy sauce, sesame oil and salt mixing well. Place a teaspoon of the mixture into the center of each wanton wrapper, pinch the wrapper together at the top to form a small package. Heat oil and deep fry until golden brown. Drain and serve with soy sauce or sweet and sour sauce.

Anything Goes Pizza
(you can replace ingredients with your own)
1/2 pound ground beef or chicken or pork whatever
1 small onion, chopped
Salt and pepper to taste
1 (1-pound) pre-baked pizza base (you cna buy them in most supermarkets)
1 (8-ounce) can pizza sauce or tomato paste or make up your own paste)
6 bacon strips, (or pork, beef etc) cooked and crumbled
20 dill pickle round slices (leave out if wish)
2 cups (8-ounces) shredded mozzarella cheese
1 teaspoon Italian seasoning or any season you fancy.
In a frypan or skillet, cook beef and onion until meat is cooked; drain, season with salt and pepper; set aside.Place crust on an ungreased 12-inch pizza pan. Spread with pizza sauce; top with beef mixture, bacon, pickles and cheeses. Sprinkle with Italian seasoning. Lastly add 2 cups ( 8-ounces) shredded cheddar cheese then use your favourite seasonings.
Bake at 450*F (230*C) for 8 to 10 minutes or until cheese is melted.
Makes either 1 or 6 slices.
Spinach Special
Bring pan of water to boil and throw in the sliced spinach and cook for 3 minutes.
Remove from pan and
run under cold tap using a strainer/colander.
Return to the suacepan adding the diced small onion with 1 strip of bacon also cut into small pieces with a dab of butter stir till butter has melted and the onion and bacon has browned then add the spinach and blend in well.
Served mainly with meat dishes.
PAVLOVA
Seems to be some controversy as to where the famous Pavlova originated from; a chef in Adelaide had seen Anna Pavlova dance and wanted to create an dessert in her honour, the other says that it's birth came from across the seas New Zealand, but who cares, lets make this scrumptious dessert...........
Pavlova!!Ingredients:
4 egg whites; ½ teaspoon salt; 8 oz castor sugar; 4 teaspoon cornflour; 2 teaspoon vinegar; ½ teaspoon vanilla essence; ½ pint double (means thickened) cream; slection of fresh fruit or canned fruit slad; 9” shallowproof dish.
Method:Set oven to 275deg or Mark 1. Beat egg whites and salt with electric mixer until stiff. Add sugar to mixture, 1 tablespoon at a time, beating until very stiff, then beat in the cornflour, vinegar and vanilla.
Butter dish and fill with meringue mixture, hollow out centre. (means try and leave a circle in the middle of meringue so as can add to it when cooked) Bake in oven for 11/2 hours (could be less with fan forced ovens)
When cool fill with sweetened fruit and then layer top with fresh cream dress top with either fresh strawberries, pears or peaches or something similar.
